Foodie Friday is a couple of days late this week as I clearly have not gotten quite back into the grove of posting regularly. However, I am excited to get back into crafting and baking and documenting and talking all about it.
This “salad” was made last week while it was snowing out and it could not have been more fitting. When I was in India it was hot and sticky and at times all I wanted to eat was a light salad. Don’t get me wrong I am not here to complain about getting the chance to eat authentic Indian food. It was just heavy at times and oh so hot out. I could not have salad over there because it would have been washed in the water, which I could not drink. And is often the case you think about that one thing you cannot have.
Of course when we came back I looked for a winter salad to make and came across this recipe by Whisked. I loved how the focus was all about how not a summer salad this salad is. That’s when I found myself making my salad while it snowed out. Perfect. This recipe really is more a cold weather dish as it ends up being hearty and filling. The combination of Parmesan cheese, hazelnuts and butternut squash make for a rich dish.

Looks Delicious. And I’m sure it’s pretty low on the glycemic index, which is great for my beau. I’ll be keeping this in mind for later.

I just started cooking with Israeli cous cous and I love it so much more than regular cous cous. Can’t wait to try this salad – I’ve been looking for an excuse to play with hazelnuts too!
