I’m out road trippin’ it this weekend around Pennsylvania and New York to see friends. Of course I’m hopeful that tasty food will be a big part of this time. Already my friend and I made a delicious meal my first night here. It was the perfect spring time dinner. Simple, flavorful, and packed with all kinds of goodness like pine nuts spinach and peas. Oh and I can’t of course forget the homemade pesto, is there anything better? The local wine didn’t hurt.
We used this recipe from Ina Garten. I was unsure about all this mayo business, but it does add a tang worth keeping without the mayo flavor. I think I’ll be experimenting with this meal, perhaps adding even more veggies and some ricotta cheese. This is the type of recipe you can easily adapt with whatever you have in the kitchen.

Agreed! Pesto is the best.
