The beautiful thing about Summer cooking is that it tends not to need much cooking at all. It is a chance to allow the fresh, flavorful food to shine. It is an opportunity to spend little time in the kitchen, but have big rewards in return. This recipe for Lemon Cucumber Tofu Salad from 101 Cookbooks (one of my all time favorite cooking blogs!) is a great example of this. I whipped up this recipe one morning, before the heat crept into the day and let it cool off in the fridge for lunch time. It has been the perfect, light, healthy lunch. If you are looking for a hardy meal, you can put this recipe on top of whole grains, mung beans, or lentils.

I read The Marriage Plot earlier this summer and were really drawn in by the characters but the way the booked went towards the end and the very end just left me wanting more. I’d love to hear your opinion.
