If you are not into pie crusts (Linz, I’m talking to you!) then this is a pie for you. This dessert allows you to enjoy fresh fruit in pie form without that pesky dough. It does have a simple graham cracker crust, but it compliments the filling well. I used a recipe from Boulder Locavore to make this fluffy goodness. I did make one big change in the recipe. Instead of using a cherry chocolate bar, I used dark chocolate and real cherries. I chopped about 20 cherries and mixed it into the pie when combining the marshmallow mixture with the heavy whipping cream. The recipe also recommends freezing the pie and then allowing it to thaw, this does add to the creamy texture. Linz said the pie tasted like Cherry Garcia ice cream, I could not agree more.

Hi Athena! Thanks for the note letting me know your tried this recipe and I love your adaptations to it. As you probably noted in the original recipe it is a vintage recipe that was chocolate chip. That sounds so plain and I imagined it to look so, well, plain I added the cherry element. I love that you iterated it to include a more full, fresh spin! Thanks again for letting me know!
