All winter long I have fallen head over heels with a Blood Orange & Kale Salad from Spoon Fork Bacon. With Summer in full swing I was wanting a version of this salad, but one that utilized seasonal produce. There is just something about this homemade salad dressing and fresh fruit that I just love.
Ingredients:
Balsamic Vinaigrette
1/2 shallot, minced
1 garlic clove, minced
2 1/2Â teaspoons honey
1 teaspoon Dijon mustard
3 tablespoons balsamic vinegar
1/2 cup extra virgin olive oil
salt & pepper to taste
Salad
Mixed green salad
1/3 cup toasted almond slivers
1/2 cup goat cheese, crumbled
1/3 cup sliced strawberries
1/3 cup blueberries
1) Whisk together ingredients for the balsamic vinaigrette.
2) Toss together all salad ingredients and mix with dressing.

I agree about homemade salad dressing. It can’t be beat. Your fruit looks spectacular on that salad. Oh how I miss the PNW!
